I’m very excited to start posting recipes on this blog. It’s something I’ve been thinking about and planning to do for a long time so it’s very cool to finally see it happen. My preferred recipes are those that don’t ask for too many ingredients and are relativly healthy. I hope you like these posts!
I love an after-dinner sweet treat, although I’m much more likely to grab an ice bar or a few spoonfuls of Puhoi Valley’s gourmet yogurt than whip up my own creation. Enter: Super-Simple Blueberry Tiramisu. What I love about it is that it’s super quick to throw together. Plus, all the low fat swaps make it a much healthier version of the decadent original!
What you need (makes 2)
frozen blueberries, 200g
sugar, 1/2 tablespoon
savoiardi biscuits (Italian sponge fingers), 3 cut in 3cm pieces
extra-light ricotta cheese, 100g
low fat vanilla yogurt, 75g
extra fresh blueberries, 50 – 100g (depending on how many you want to top it off with!)
grated dark or white chocolate, 25g
What you need to do
1. Add blueberries and sugar to a small saucepan and cook for 2 – 3 minutes over low heat, or until blueberries soften.
2. Dip the biscuit pieces into the syrup, and divide them amongst 2 glasses. Top them with the warmed berries and syrup.
3. In a small-sized bowl, beat the ricotta and yogurt until smooth. Spoon the mixture into the glasses.
4. Top with fresh berries and sprinkle with grated dark (or white if you prefer) chocolate.
Yum!
