There were three things I had considered doing this afternoon – 1) attempting to make peanut butter cups, 2) make smoothies, or 3) try on dresses in Juliette Hogan. I ended up being persuaded towards number 2 (*cough* Tim *cough*), however it was a good opportunity to experiment with a few new ingredients – namely chia seeds, coconut oil, and cocoa nibs (#superfoodsunday, obviously).
This smoothie is surprisingly sweet, and very filling. Perfect for breakfast or an afternoon snack. The cocoa nibs give it a bitter-sweet cocoa hit (though the nibs I sprinkled on top were rather difficult to drink using a straw… not recommended). To make, simply combine the ingredients in a blender and blend until smooth – at least a full minute to ensure the cocoa nibs are suitably crushed.
Berry Yoghurt SmoothiePrint This
- 2 cups natural, plain yoghurt
- 1 cup mixed berries
- 1 teaspoon cinnamon
- 1 teaspoon stevia
- 2 teaspoons chia seeds
- 1 tablespoon cocoa nibs
- 1 tablespoon coconut oil (optional)
- 2 teaspoons desiccated coconut (optional)
Put all ingredients in a blender and blend until smooth.
